The core of the Shun Premier blade is made of extremely hard VG Max steel and is sheathed in 32 layers of Damascus steel. This combination of different types of steel makes the cutting edge hard and flexible at the same time. The blade, which is ground on both sides, is comfortable to handle thanks to its low weight and guarantees a clean and precise cut.

The hammered surface - known as tsuchime in Japan - is not only for aesthetic reasons, but also makes it easier to release the food from the blade thanks to the small air cushions that are created.
